Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Very deep dark brown beer with a thin pinkish-hued head. Aroma is quite cherryish and fruity but with loads of wild funkiness. An earthy dustiness, some lightly funky, chewy, dusty aroma. Softly bretty and chewy with a hint of fruity spiciness. The cherry skin tannic spiciness really comes out. Musty and funky and a little bit fruity. Quite sour and rustic with a chewy cherry fruitiness. The flavour of the cherry pits (almond) mixes with a bit of raspberry fruitiness. The cherry aroma really picks up and you even start to get a kiss of dark chocolate. Lingering vineous character. Very unique brew.

Thanks to JoeMcPhee for sharing this - this poured a very cloudy red - at first, the aroma and flavor were dominated by strong phenolic character, but as the beer was allowed to breathe, that quality faded, and this turned out to be quite a complex beer - extremely earthy flavor, with a lot of sour/acidic cherry skins and pits - the bacteria fermentation is evident; quite a bit of lacto character - little sweetness - lightly funky, with a slight vinegar-ish bite at the end - interesting.

Bottle. 75cl. Unclear medium red color with a average, fizzy, fair lacing, mostly diminishing, off-white - light red head. Aroma is moderate cherry, barnyard, vinegar, acidic, sour, wood, notes of medicine. Flavor is moderate to light heavy sweet, moderate acidic and acetic (vinegar) with a average to long duration, and a dry finish. Body is medium, texture is oily, carbonation is soft to flat. Someone generously gave me a sample from this $20+ bottle at PP bottle shop. Looks great. Big head, very cloudy red brown color, looks almost chunky. Aroma is mild. I bet the aroma was fantastic at bottling. Great flavor of cherries and a little malt. Not sour as you would expect from the lactic acid. Very nice.

750 From O’briens. Gusher lost most of the bottle, insnae gush. Red pour, cherry nose, overall okay, not super great.
