Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Rich cola color with small, transient head. Initial aroma of malty-powdered chocolate, and roastiness; typical of a modern stout/porter. After beer warms; subtle berry and vinegar/vinous note arises in aroma and taste. Lack of hops. Subtle tartness/sourness at the very end of the finish. Thin to medium bodied. Very mild. I like the flavor combination, but it needs to be more overstated.

2008 Bottle - Pours an opaque black without being too heavy, very small white head, aroma is of smoked malt, slightly coffee bitter on the front end, opens up into a great mix of smoke, hop flowers and bitter chocolate, I really dug this beer and would definitely share with others....

Bottle, pours black with a ruby tinge. Fabulous aroma of berry which gives way to a peaty smokiness. Velvety mouthfeel. Flavour is roasted malt , berry, dark chocolate. Nicely balanced, dryish bitter, hoppy finish. A complex and massively enjoyable brew. A real treat.

Pours deep red/almost black with head that dies instantly. Berries and moderate roast and hints of chocolate in nose. Flavor follows nose, though roasts dominate. Feels a little watery.

Sweet fruit berry aroma. Black colour with fair head and lacing. Malt sweet fruit flavour. Smooth palate.
