Our standard IPA uses American malt and lots of American hops, which are bold and aggressive, along with our American ale strain, which is somewhat neutral, and thereby highlights the malt and hops.
To change it up a bit, we brewed this classic English version. We used traditional pale ale malt and crystal malts, English ale yeast, and (still) lots of hops. However, English hop varieties tend to be softer and mellower, even at an equivalent IBU level. The malt is kilned (dried) at warmer temps, and therefore is a bit darker and has a mild nuttiness to it. The English ale yeast was borrowed from some fellow local brewers (wink wink nudge nudge) who use it as their house yeast (thanks guys!). It contributes a fruitier aroma and flavor than our house yeast, which is typical of the style. It also has a lower attenuation, which means it stops fermenting earlier and therefore leaves more residual sweetness. Dry hopped and cold conditioned.
