This Barley Wine style ale is the only one brewed to 24.5 Plato, with 57% wheat, boiled for three hours, pitched with or German Hefe-Weizen yeast, finished with a Scottish ale yeast, and then aged with oak. The resulting product is extremely complex with flavors of melon, fleshy fruits, such as peach and apricot, vanilla, caramel, oak, spicy black pepper notes, and subtle esters. These flavors come in a large part, from the raw ingredients and will vary from vintage to vintage. BARE TREES WEISS WINE VINTAGE 2000 is ready to drink now but, like fine wine, will age very well for the next several years. As it ages, the flavor complexities will continue to mature and change.
