Description:
Dunkelweizen is a beer partially left unfiltered, this allows for the essence of the yeast to remain prominent thus giving it a cloudy appearance. Yeast is a strong character in this style of brew. Highly effervescent hints of banana, clove, bubblegum, and even apple can be detected from the yeast used. The body of the ale is usually amber to dark brown. It possesses a stronger malt character then the lighter Hefeweizen, with toasted flavors and a slight spiciness throughout -- you might even notice a raisin hint. The presence of so much wheat also contributes to strong ‘head’ retention and a slight tartness. Hops are not dominant in this style to off set any sweetness since there is so much personality in the yeast strain. Bitterness is at a minimum, with virtually no aroma or flavor from the addition of hops. While the base recipe was developed by the team of Legend brewers; brewer Alex Coppola specifically honed this particular recipe after weeks of over-analysis and a highly critical eye. He volunteered his services due to his “expert” credentials, which basically relies on the fact that German wheat beers are his favorite style. So after years of sampling all Germany has to offer, he embarked on this great brewing adventure. This beer’s profile stands strong, very complex from start to finish and definitely not boring -- kind of like sitting next to someone with a multiple personality disorder aboard a cross-country bus trip… and they have the window seat.
