In tribute to the beauty of the Cimarron River area (also known as the Red Fork of the Arkansas) in southwest Kansas, this is a deep ruby ale with hop aromas and flavors center stage. The honey malt contributes to the medium body of this red ale, while Simcoe, Columbus and Centennial hops add the citrusy hop character. We employed an American yeast strain to emphasize the hop notes of this deep ruby ale. Not as bitter as an IPA, hop aromas and flavors nevertheless take center stage in Cimarron. O.G. 15.7°P/1063 Hops – 40 IBUs
