Commercial Description:
Yin Jiu is well known as a kind of nationallistically traditional drink of the Naxi people of the Lijiang region. It was originally made 500 years ago in the middle period of the Ming Dynasty. It is a favoured drink both at home and abroad. It has an amber colour, taste as sweet as fresh honey, and delicate fragrance. Made from grains, special distiller's yeast and the snow water from Yulong Mountain. Contains no additives.

Literally a barley wine, this is a deep burgundy brew with no carbonation or head. The aroma is rich and strong - tamari, plums, apples, wildflower honey, brown sugar and sherry. The flavour is sweet with a rounded character. Notes of plums, vanilla, brown sugar, marzipan, burnt raisins and late alcohol coat the tongue. Body is thick and slightly oily. The finish balances alcoholic dryness with the sherryish richness of the malt. A dessert beer similar to SA Millenium or Utopias.

The grains referred to in the description are barley, sorghum and wheat (confirmed in Discovering Yunnan, by Jim Goodman). Definitely worth checking out if you visit Lijiang, which is in itself definitely worth checking out. I was unable to find a non-commercial version of this beverage.
