COMMERCIAL DESCRIPTION
Our homage to the rustic, provincial ales of Wallonia, gold is a medium strength wild ale best enjoyed in good company. Delicately balanced, gold shows notes of pepper, fresh hops, lemon zest and stone fruits. The palate is effervescent and bone dry with a subtle spicy bitterness, pillowy body and developing acidity from the indigenous flora. This beer undergoes a warm primary fermentation in wide vats before being transferred into French oak barrels for maturation. Barrels are then selected and blended to meet our desired character before being packaged and naturally bottle conditioned for a minimum of 4 weeks for ideal carbonation. Only then do we release this unspiced wild ale to be enjoyed at table with your favourite foods and best of friends.

UPDATED: MAR 28, 2024 (Draught at Craft Beer Covent Garden, London, 17 Nov 2023) Golden colour with frothy, white head. Fruity, sourish nose with citrus, grapefruit and oak wood. Fruity, tart taste with notes of citrus, grapefruit, vinegar, oak wood, white wine, herbs and a mild citric bitterness. Medium body, dry. Tart, woody and really tasty. Great beer!

UPDATED: SEP 20, 2023 Bottle @ Cafe Albert tasting. Pours slighty hazy golden with a white head. Aroma of light sourness, light malt, yeast, barnyard, wet wood, tart fruit, grapes, light spice. Flavor is mildly sour, light malt, yeast, barnyard, tart fruit, grapes, citrus, light notes of pickled cucumbers. Medium body, average carbonation, dry and acidic finish. Smooth and wellbalanced. 081022

Aroma of green apple, pear, plum, yellow kiwi, gooseberry. Taste has sour plum, gooseberry & kiwi, soft lactic touches in a herbal-spicy middle. Tart, fruity finish, bit woody, yellow fruits & stonefruit lingering. Medium body, slick texture, average carbonation. Fairly decent tribute to Belgian Sours.

ABV: 5.0%. Cloudy - hazy medium yellow colour with a small to average, fizzy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, pale malt, wheat, light to moderate hoppy, flowers, lemon zest - stone fruit, moderate yeasty, fruity yeast, saison yeast, pepper, light funk. Flavor is moderate sweet and bitter with a average to long duration, saison yeast, flowers, dusty, pepper, lemon zest - stone fruit, light funky. Body is medium, texture is oily to watery, carbonation is soft. [20180804]

UPDATED: AUG 18, 2020 A 750ml bottle, blend #27, bottled in February 2020, and with a best before date of February 2025. Poured into a 3 Fonteinen Zenne glass. It was a lightly hazy golden colour with a one finger white head that dissipated fairly quickly, while leaving some spotty lacing. Aromas funky, leather, oak, lemon zest, white grape, with apricot notes. Taste tart, lightly sour, white wine grapes, oak, funky, apricot, green apple, and lemon zest. Medium to light bodied with moderate to soft carbonation. Overall, my first Wildflower bottle and wow, this was enjoyable. Good balance of funky, citrus and stone fruit flavours.

UPDATED: AUG 16, 2020 Had this already in April and it's still fantastic! Updated review to follow: Pours hazy straw-gold, a finger of fluffy head with great retention and lacing. Aroma is floral, with white wine notes, minor white vinegar, and yeasty funk. Tastes tart, somehow salty (neck kiss saltiness), floral, winey, fruity. All very delicate and elegant. Light bodied, crisp and lightly carbonated. A very special gem!

UPDATED: FEB 16, 2020 Una grande wild. Color oro con schiuma bianca fine compatta. Al naso belle note acidule e funk, al palato perfetto equilibrio di acidulo e secchezza, appena tart e citrica, media persistenza. Carbonazione bassa corpo medio.

UPDATED: OCT 30, 2019 5%ABV. Wild ale. Poured out pale yellow. 5°SRM. Nose has aromas of plum with a round fruity body suggesting Chardonnay grapes, hint of cultured butter and diacetyl. Overall, a nice clean nose that is strongly reminiscent of white wine, referencing chardonnay or chablis. Mouthfeel silky and a little slick, otherwise clean and light. Low carbonation. Palate has flavors of biscuit, dough, hint of raw flour. Strong buttery, buttered popcorn. There are flavors of butternut squash. Hop flavors are woody, floral. Finish is dry with a nice attenuation. Overall, a pleasant enough ale with noticeable wild fermentation to give it character. The fact that it referenced white wine made interesting.

UPDATED: NOV 2, 2019 On tap @Luppolo Station (Rome). Gialla acida, mediamente torbida, schiuma bianca medio-leggera. Al naso note di bretta, citrico, limone, stalla, leggero vinoso. In bocca è appena dolce all'attacco con chiusura acida medio-leggera, vinosa, leggermente tart. Corpo leggero, carbonazione medio-leggera. Niente male.
