De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen. De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

UPDATED: DEC 11, 2022 Pours a slightly cloudy, deep, dark amber coloration with a small, fizzy head. Smells of slightly doughy, caramelly malt and estery fruits, with notes of red apple, apricot and gooseberry, as well as hints of hay, spice, funk and oak. Taste is a great balance of slightly doughy and caramelly malt and rich notes of estery fruit and lighter spice, with notes of red apple, apricot, gooseberry, clove and peppery spice, as well as some musty funk and slightly tannic oak. Finished with a medium tartness and some estery fruit and spice, as well as musty fubnk and oak lingering in the aftertaste. Smooth mouthfeel with a medium body and carbontion. While this stands on its own very well, it certainly is by far the best value for money I ever encountered when it comes to Gueuze, although your mileage may vary. I paid 4€ for this 375ml bottle and honestly enjoyed it better than some more established and expensive examples of the style. It's a bit more malt-forward than your average Gueuze, which is not a bad thing at all in my book, while being quite funky, with a certain musty, leathery quality to it. The esters are coming through nicely as well, quite fruity, with hints of spice, while are also some tannic, oaky accents to this. Overall, this makes for a very nice, quite funky and estery Gueuze that feels rich and well-balanced.

UPDATED: JUL 17, 2022 Pours a hazy, intense orange, with at most one finger of large meshed white head. Quick to dissipate, no lacing. The aroma is (nicely) on the soft side of the style, though weaker than expected: moderate sourness (softly citric and slightly acetic) with notes of tangerine, lemon, maybe apple and the slightest hint of vinegar. Nice funky complexity, with leather and a barnyardy feel most noticeable. Feels brighter/more vivid in taste. Neutral malty base, moderate sourness (softly citric, slightly acetic), taste notes as per aroma. Nice sweet/sour balance in the mouth, with a pretty dry (almost tannic) finish that leaves a clean mouth. Light to medium bodied with medium carbonation, a simple and easy but nicely vivid mouthfeel. Overall this was very enjoyable and quite easy to drink, with a nice funky complexity to it.

UPDATED: JAN 28, 2021 (Bottle) Barnyard and fruity aroma bursts forth when popping the cork. Pours a bubbling, unclear, deep orange body with a medium-large, receding, white head. Further notes on the aroma once in the glass: barnyard, funky, leather, apple, champagne. Body is medium; very fine and soft, velvety carbonation; round mouthfeel. Flavor is fantastic; medium sweet and tart, very acidic; very fruity but also very funky; long duration. Really outstanding.

UPDATED: JAN 25, 2021 375ml bottle. Unclear orange, bit stable foamy head. Orange zest, grapefruit, funky brett notes, barnyard, citrus acid, green unripe apples, quince, tannins, oak barrel notes. Acidic sourness, minimal sweet. Full bodied, oily texture, fizzy carbonated, dry sour finish. Very complex and very refreshing at just 5% abv. A very pleasant beer.

UPDATED: DEC 22, 2020 Fles geprobeerd met Roelzie. Het is een helder geel bier met een dun schuim. Het heeft een zure wrange geur. De smaak is echter maar licht zuur, en wat wrang. Erg zacht.
