Commercial Description:
SAISON DE PIPAIX 6 %vol. 75cl a traditional Wallonian saison beer, born with the brewery in 1785. Dry, normally hopped, slightly acidic, very spicy (black pepper, ginger, sweet orange peel, curaçao, star anise...)

Cork and capped 11,2cL bottle, unknown vintage labeled at 6.5% ABV, poured into a tulip. The cork slides out with nary a sound and no carbonation that I can detect. An aggressive pour produces a small collection of large bubbles that recedes immediately to a razor thin collar. The aroma is weird and smells almost like spoiled apple juice. There is definitely a deep musty funk with some fruit sweetness and an interesting spiciness that’s tough to pinpoint, definitely some pepper and anise. The taste is even weirder, if possible, and not in a good way this time. It’s extremely watery overall with a tart fruitiness mixed with a heavy musty character. The spices, especially anise are most present in the finish. The mouthfeel is almost completely still and extremely slick with a dry tart sourness in the finish. This may have just been a bad bottle, but I really didn’t like this one at all. The smell resembled something like a saison, but the taste was just not that pleasant and the complete lack of carbonation didn’t help. Yuck.

Pours orange/gold with a modest white head and a floral aroma. The flavor is a vinous yeasty mix of tastes, including citrus, anise, pepper and various fruits. Sort of sweet, sort of sour, but not like any other saison I have had.

Drank at beerfestival in Tongeren. Very very nice saison-beer. Has a lot of the muskyness you’d expect, but hints of sourness and sweetness as well. The acidity comes forward very nice too.

Source: 1995 bottle split at Chuck’s.
Glass: Wine glass.
Appearance: Slightly hazy gold pour with a thin white head.
Aroma: Very spicy with a hint of oranges and yeast.
Flavor: Sweet malt with oranges and spices. A hint of iron on the back end.
Palate: Medium/light body with solid carbonation.
Overall: Excellent for the age. These are very hit and miss, and this one was on the high side of hit.

Sampled on 10/17/2009. This saison pours a deep orange gold color from a capped and corked 750ml bottle. Medium sized white foamy head with good retention and nice lacing. The aroma is orange peel, fruity, spicy and sweet. A medium bodied saison. The malts are fruity and sweet. Orange and peaches. Slightly vinous, some must and some funk. Yeasty, fruity and spicy. Finishes quite dry. There is a lot going on in this beer, spices, must, funk, fruitiness all combine and contrast, and change with every sip. Nice lively carbonation. Mouthfeel is full and round. Finish is crisp and dry. Aftertaste is slightly bitter and tart.

Old looking 33cl bottle thanks to Hopscotch. Pour is deep, hearty looking cloudy copper with almost no head. Aroma is brandy, lactic acid, mild funk, apricots, brett-like aromas, and a little green apple. Flavor is more delicate than expected. Lightly sweet and sour up front with a smooth transition into a lightly woody and funky middle. The finish is a bit smoky, with a touch of roasted malt and light hay. Really a different saison but quite tasty. Much easier to drink than I was expecting. Happy to have tried this one.

Aroma of gorgonzola cheese, apples, and belgian yeast. Taste is belgian yeast, dry apples, dust, and cheese. Finish is a bit sweet, some dryness. Yummy.
