Pours a well carbonated hazy banana pudding, golden and very hazy, straw, with a small whitish bubbly head, well carbonated, laces ok. Aromas are very fruity, banana and citrus fruits, a bit tart, with some straw, apple, and some dusty barnyard and funk. A nice citric acid bite, I really like it. Initial is a nice light tartness upfront, fairly light on the palate but full, citric lemon zest, a touch of banana, cool cereal malts, smooth and creamy on the palate, I really don’t get much yeast or spice, instead this goes down very easy, very fruity but not sweet, acid helps balance, but it isn’t really sour either, maybe a bit on the back, this beer is very drinkable. Looks earthy and venerable in glass. Aroma is horseblanket, funk upfront, touches of lemon zest on the back end. Flavor is subtle, and builds in body and complexity throughout the palate. Earthy, brett notes begin the parade of flavors, followed – no, layered – by rosemary, puckering lemon, grapefruit pith, and a touch of cotton. Finishes tart and funky, probably the most stand-out part of this beer. The after-flavors are phenomenal. Mouthfeel is dreamy smooth, lightly effervescent, and lush. The smell is slightly edgy, yet smooth and round. Lots of fruit esters all around and strange but pleasant candy aromas. Hints of spices.
The taste is very good. Wonderful fresh fruity flavors. The taste is mostly sweet but has a subtle tartness to it. Fruits of the forest, candy and hints of spices. The finish is mildly bitter and grassy.
Medium body, medium carbonation, slightly dry in the finish.
A really unique beer, I dare to say. What a strange but lovely character. An oddball beer in an otherwise oddball style.
NOTE: I’ve had the opportunity to try a bottle of this that was cellared for about four years. It had not hold up well. It had lost quite a lot of the sweet fruity candy-like character and developed a more distinctly spicy and semi-funky character.

Aroma is very abstract and candy like with lots of berries and other less common fruit. Mouthfeel is lively and rather light. Flavour is just as yeasty and abstract as the aroma, very original and tasty, quite clean and fruity without much bitterness but still really flavourfull and cool. Rich cellar character gives way to a bit of Brett-like funk and a kiss of shimmering hops. Comes in a very effervescent pale gold, with a billowing fine white head. Flavor reveals richer and more satisfying malt complexity. Bright, snappy and spicy yeasts compliment the cellar-like nose. Oh so fresh and drinkable. Crispy. Very dry, but holding satisfying character. As a standard measurement of the style, it exceeds my expectations and is absolutely stunning. I’ll drink anything Fantome brews. On remarque déjà des effluves acides. Robe orangée et trouble, légère mousse et effervescence assez faible. En bouche, la bière est relativement ronde et présente une belle touche maltée très légèrement sucrée. On remarque également une touche de levure fruitée et campagnarde. Puis une longue finale lactique et citrique s’installe et est accompagnée d’une légère touche de houblon. Très rafraîchissant et facile à boire, l’alcool ne transparaît pas du tout. Un classique !
