This DIPA recipe has won me se
10 lbs. Briess 2-Row
8 lbs. Maris Otter pale malt
1 lb. Vienna
1lb. 45L crystal malt
0.5lb. Belgian Biscut
1.5 lbs. Organic Light Brown Sugar (added to boil)
1oz Simcoe Plugs First Wort Hopping (FWH)
2oz Columbus pellet 60mis
2oz Centennial Plugs 30
2oz Cascade Plugs 15
Irish moss 15
1oz Simcoe Plugs 10
1oz Simcoe DRY HOP
WLP 001 California with 1 quart starter
Mash grains in 7 gallons water(strike temp 162F) rest at 150F for 90 mins.
Sparge 5 gallons 168F
Collect 6.5 gallons wort.
Boil for 90 mins adding FWH at beginning of run-off
Add hops as listed
add sugar last 5 mins of boil to get better effcency from hops.
Pitch yeast starter when cool.
Ferment 10 days @ 70F
Rack to secondary w/ dry hops for 10 days then bottle w/ 1.25 cups Light DME
Enjoy young after 2 weeks for maximum aromas.
This beer won 1st. after 11 day in the bottle
