Bunny Hoppin’ Ale

5 Gallon Batch. I started off
2 lbs Crystal 20
6 lbs Light DME
1 oz Columbus (60)
1 oz Cascade (30)
1 oz Cascade (15)
1 oz Cascade (Dry)
Wyeast American Ale 1056 (from starter)
Mash grains in 1.5 gallons of water at 154F for 60 minutes. Strain to brew kettle and sparge with 170 degree water. Add water to brew kettle until you have about 6.25 gallons and bring to boil. At boiling, add DME and begin 60 minute boil. Follow hop schedule above. Cool wort as quickly as possible, transfer to primary (using a wort aerator if you have one) and pitch yeast. You must create a yeast starter for this big of a beer, I cannot stress this enough! Keep in primary for 5-7 days and transfer to secondary (add dry hops). Let condition for 3 more weeks and bottle with 3/4 cup of corn sugar.
