this is an alsatian recipe, si
1 2 1/2lb chicken, cut into joints
3oz bacon, sliced
20 pearl onions, peeled
2 large shallots, diced
8oz mushrooms, sliced
1 tbsp fresh thyme, chopped
400mL beer
100mL chicken stock
3 tbsp sour cream
salt, pepper, and cayenne to taste
butter
flour
paprika
1. mix a little paprika, salt and pepper with some flour and dredge the chicken pieces in the mixture
2. in an over proof pot, brown the chicken pieces well on all sides, remove and set aside
3. add the shallots and pearl onions and thyme to the pot and saute until brown
4. deglaze with the beer and stock and return the chicken to the pot
5. in a separate pan, brown the mushrooms in some butter, then add them to the pot
6. cook covered in a 300 F oven for 45 mins
7. remove the chicken pieces from the pot set aside and keep warm, add the sour cream to the pot and simmer the liquid until it has reduced by half
8. pour the sauce over the chicken and serve
