Malt Bill: 80% Marris Otter 10% Breiss Munich 10% Breiss 40L Crystal Target OG 1.052 Hop Bill: (all hops were pellets) 1.43 oz 12% Simcoe Hops with 60 minutes left .36 oz 8.9% Amarillo with 15 mins left .36 oz 8.9% Amarillo with 10 mins left .71 oz Amarillo at KO .36 oz Simcoe at KO Water Treatment: 2 tbls of gypsum in mash water 1 tsp of Irish Moss with 15 mins left in boil Yeast: Whitelabs 001 built up on 20 oz starter of amber extract
1.Mash at 155 for an hour with filtered water that has had gypsum added. 2. Cool to at least 65 3.Pitch yeast that has been built up on a 20 oz starter 4.Ferment between 65-70 for 10-14 days, seconday is optional. 5.Peaks about a month after bottling
