This is a Promash 2 1/2 gallon recipe.
4 lbs pale malt (2 row) 4 lbs flaked rye 2 lbs vienna malt 2 oz chocolate malt 1/2 oz Perle pel hops for 60 min 1/4 oz Perle pel hops for 10 min 1/4 oz Perle pel hops dry 12 g Saflager yeast s-23 1 tsp irish moss
1. Mash grains at 150 f for 20 min at ph 5.2 using a thick mash 2. Add treated 195 f water to thin mash and raise temp to 155 f 3. Check conversion at 2 hours. 4. Sparge till you collect at least 5 gallons wort 5. Boil using hop schedule for 3 hours, adding irish moss last 15 min 6. Strain wort and cool to 75 f and pitch yeast while aerating well 7. Once fermentation begins celler primary at ~50 f 8. Move to secondary about a week later and dry hop 9. Secondary for 2 months 10. Bottle and prime with your favorite type sugar
