The kolsch style is all about
Extract:
5 lbs Muntons Extra Light Dry Malt Extract
1 lb Muntons Wheat Dry Malt Extract

Steeping (for 15 minutes @ 155):
¼ lb Gambrinus Honey Malt
½ lb Breiss Crystal 40L

Hops (all pellets)
1 oz Czech Saaz (3.8% AA) @ 60
½ oz Mt. Hood (4.2) @ 60
1 oz Czech Saaz @ 0
½ oz Mt. Hood @ 0

Wyeast 2565 Kolsch

Quite straightforward, steep the grains at 155 for 15-30 minutes. Do a full 60 minute boil with the hops additions as listed. I did 2 weeks of primary at room temp and then lagered it in a fridge at around 45 for a month. I would definitely recommend lagering if you have the capability, but it’s not entirely necessary.
