Father’s Day American Style Kolsch/Blond

A Kolsch inspired beer brewed for my dad for Father’s Day. Not a traditional Kolsch at 32 IBU, and with some flaked rye, but came out to be a very solid, lovely session beer.
2 lbs German Munich
2 lbs wheat malt
2 lbs German Pilsner
2 lbs flaked rye
3 lbs Briess Pilsen Light DME

1 oz Saaz Pellets
1 oz Tettnager Pellets
1 oz Hallertau Pellets
1/2 oz whole leaf Hallertau

Irish Moss or equivalent

4 Gallons bottled water

Wyeast 2565 Kolsch
4 gallon boil

Steep specialty grains at 150*F for 30 minutes
Mashout at 170*F for 10 minutes

Add DME and bring up to a boil

60 minute boil
60 min 1 oz Saaz Pellets
30 min Irish Moss or Whirlfloc
15 min 1 oz Tettnager Pellets
5 min 1 oz Hallertau Pellets

Add an extra gallon of water to bring back to ~ 5 Gallons

Chill and pitch Wyeast 2565 Kolsch yeast

2 weeks or until activity slows
Rack to secondary over a 1/2 oz of whole leaf Hallertau
Wait 1 week to clear (keep at a lower temperature, like ~60*F)

Bottle with dextrose...

This should be ~ 4.5% ABV
32 IBU.
