If you can get your hands on some fresh Simcoe hops during harvest season, this one is a winner. MASSIVE tropical notes in the aroma, balanced out with just enough of a malt backbone. Be sure to use hop bags when brewing this one, and make sure there is plenty of space in your kettle to accommodate 2.4+ lbs. of beautiful, plump, fresh hops.

Fresh Simcoe (60 min.) 5.0 oz. Fresh Simcoe (20 min.) 8.0 oz. Fresh Simcoe (15 min.) 15.0 oz. Fresh Simcoe (flameout) --------------- 2.5 oz. Dry Simcoe (dry-hop: 10 days) --------------- White Labs WLP001 California Ale Yeast

Mash @ 151°f for 1 hour, sparge as usual. 60 min. boil (add Whirfloc-T or Irish moss to boil for clarity). Ferment 1 week primary, 2 weeks secondary at 68°f.
