Well, it won the inaugural Rat
1kg English style pale malt

500g ~40-50L crystal malt

250g black malt

250g roast barley

2kg dark LME (Coopers)

1kg black LME (Morgans)

1kg chocolate LME (Morgans)



60g Pride or Ringwood (10%AA) start of boil

30g Fuggles at flame out



White Labs Irish Ale Yeast WLP004
Apologies for the scant detail and roughness of these instructions, it was a very early brew for me and a lot of the success of this beer is down to a good ingredient list and a lot of luck.

*I added 1 teaspoon of gypsum to the mash water, mashed all grains for about 1.25 hours at 66C.

*Boil 1.5 hours, started with about 15 litres and ended with about 10.

*Chilled to 24C.

*Made up to 16 litres with filtered water.

*Pitched WLP004 and aerated well (would recommend a starter).

*Ferment at ~18C 2 weeks, secondary 2 weeks, bottle with 120g DME



OG: High (1.095+)

FG: 1.022
