Lambic - Unblended Jonge / Oude
The Straight Lambic, or Unblended Lambic, is a fairly sour, often moderately funky wild Belgian, yellow to deep golden wheat beer with lactic-sourness taking the place of hop bitterness in the balance. Straight lambics are single-batch, unblended beers that are often a true product of the house character of a brewery and will be more variable than a gueuze. Young (Jonge) versions (6-months) tend to be onedimensionally sour and older (Oude) lambic develop a complex Brett character that often takes upwards of a year to develop. Generally has a more simple sourness and complexity than a gueuze. Traditionally served uncarbonated from pitchers, while gueuze is bottled and very highly carbonated.
