The aroma is sour, musty and acidic upfront, earth, some cheese and citrus come in next. The flavour has a moderate sourness, citrus (lemons, some orange peel, minor grapefruit), some old cheese, woody, musty. Sour mouthfeel, medium body, high carbonation.. Finishes with a mild citric bitterness, acidic, dry. Quite tart. Really good stuff. Excellent balance between the sourness and the sweetness, very drinkable.
