Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Bottle. Sampled at the Woodshop Quad Tasting in January 09. Thanks to cquiroga for one kickass tasting. This stuff is the bomb! Still, golden color with no carbonation. Complex aroma of wet barnyard funk, hay, grains and musty oak wood. Flavor is packed with lemon citrus and a dry, oaked tartness. Near perfect finish that is both smooth and acidic, an awesome balance in between that really shows off traditional lambic. jarspag’s right...slap a Lost Abbey label on this and you’ve probably got a Top 50 Beer. Seriously underrated in my book.

Sampled at tronraner’s Xmas Eve^3 tasting. 2006 Vintage. Clear golden pour. The sour nose is tolerable. Tart citric flavors, like sour lemons. Admittedly, I don’t care for this style, but I could still appreciate this on some level.

Woodshop 4. This elixir kicks aaaaars. Not much to say...other than the fact that this was as good as most of the other "rare" lambics i’ve tried. seriously, take the label off and blindly taste everything - and this will be right up there. Silly good

Bottle thanks to guezeisgod and another one from someone who gave it to me as an extra... apologies for forgetting who you are, awesome trader person. Golden hazy orange pour with a few bubbles from the pour but no head. Very dusty/woody nose with sour citrus and lemon oil. Mild funk and grain as well.. Tart, but the woodiness makes it a bit sharp. Super tasty, for sure, but a bit disappointing for my first 3 Font.

Pours a still dark golden, ale cider, looking liquid. My stomach has a light uneasiness as the acid scents are inhaled, with dust, webs, barnyard, hints of roses, honey and malt. Light prickle on the tongue, but not carbonation. Lightly acidic and some citric zest. Quite clean. Just hints of wheat and malt. Linger is long with apricots, and orange blossom honey. When I really want to taste the flavors in its original form I let the beer set over night and go flat by itself. I find myself pondering what this would be like with a dose of bubbles.

Pours a deep red orange with no head. Flavor is oaky, sour, with lemon and dusty oak with a bit of sour apples. Also, hay and some funk. Flavor is very sour with apple cider notes. Mouthfeel is a tad odd because of the complete lack of carbonation. Get some leather and Barn notes too. Great beer.

Aroma’s a little bit of apple cider, a little funk. Not much head. Very woody, a bit of cider characters. Seems light at first but a very sour bitter finish. Strange. I expected more I guess.

12.7oz bottled FEB 23, 2006, from Ledger’s. Clear golden honey with about four small bubbles around the glass. Sour unripened apples and acetic acid are up front in the aroma. Lemon, hay, and some funk are also present, with only a little oak. Doesn’t seem crazy sour thus far. Flavor was a bit more lemony, and just a hair more sour than the aroma led on. Not crazy funky, but there is some old leather. Dry wheaty finish with earthy bitterness peaking around a 2 and sourness around a 5. No carbonation with a heavier body than I had expected from a lambic, but I guess that’s because it’s still. I gave an extra point in the overall because it didn’t warrant an 8 in flavor, though the flavor was better than the aroma. Pretty good, though not the best--it didn’t disappoint.
