Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Thanks to LawStudent09 for sharing. Hazy gold color with no head. Then... nothing. Freaking nothing. The aroma was completely dead. The taste has a very, very miniscule bit of sourness. Otherwise, nothing. This was closer to water than Miller High Life. Nothing offensive, just nothing.

courtesy of Toni Flükiger - hazy orange colour with absolutely no foam; solid aroma of rhubarb and vinegar; very low carbonation and a moderate malt body, fair sourness; quite dry and sourish aftertaste of rhubarb and mint - by far not the best beer from this brewery

[1230-20080328] 375mL bottle. Sour funk yeast aroma with a musty dusty underlying old wood characteristic. Hazy, light brown body with no head. Sour woody yeast flavour has some "juicy citrus" notes. Watery acidic medium body. Very interesting, great balance.

Brewed Feb 23, 06. No pop or fizz when I opened it. Hazy honey colored pour with a some soapy bubbles for a head. Smells excellent. Lemon, tangerine, yuzu. Tartness is offset by the breadiness in the back. The wet hay component is lost on me if it’s even there at all. There is a striking fresh cut grass and mulch like smell in there. Super tart and sour with a really smooth finish. Under ripened fruit (kiwi) and really acidic feeling in the stomach. Grapefruit and overwhelming citrus again. I wish there was a little bit more earthiness to balance it. Very few bubbles and oily feeling in the mouth. This beer is all over the place, but another great 3 Fonteinen product without a doubt.

Sandy, smooth dandelion hued pour. Dry, cheesy and lively tropical fruit aroma over a natural, sweet creaminess. Lemon juice on nectarines. Really tangy, effusive and bright. That passing sweetness carries a surprising scent of creme brulee and soft milkiness. This hasn’t sunk into the musty, bewildering force of the yeasts yet; the sweetness really predominates.

Flavor is prickly and tart, and as plainly "young" tasting as the aroma suggests; a somewhat plain, unripened fruit sweetness of mango peel and fresh cut grass. The mustiness of cool basement air permeates, and there’s a steady warmth of a sharp funkiness of pickled ginger, dry cheese, and citrus vinaigrette that seems to gather enamel-crunching strength throughout; still, the sourness consistently seems somewhat placid and resigned and muted in saltwater. The zesty tartness of its fruit characters is quite pleasant; there’s a lot of lime, nectarine, brown sugar crusted orange and apple. Middle is a vinegar dressed field green salad.

Musty, watery body; a light, but sharp acidity. Not much of a punch, and some of this off kilter sweetness hangs around too readily. The concept is interesting and presented cleanly, but the high quality already apparent only makes it more obvious that the impact of age will be undeniably positive. I want that sugar to get eaten up.

Bottle shared by eyedrinkale at Spuyten Duyvil. Hazy golden with a beautiful rich earthy, musky cologne aroam. Rich and quite fruity as well. Woody aroma, sandalwood, musk, and soft bretty funkiness. Very soft tartness with a light orange marmalade character. Wow... this stuff is delicious.

Bottle. Pours orangish with a small head. tastes like a beautiful grape vinegarette. Smooth, delicate with some green apple notes.

So this one seemed opened, just as the 2 before me said(since it was the same bottle). there was light sediment in the pour with a hazy dark orange body. There was no head. The aroma was obviously very fruity. The flavor was salty, very salty actually, and too fruity for me. It was also very tart and seemed stale. Just not that great for me.
