Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Cloudy golden orange, moderate to small head with some lacing and retention. Aroma is barnyard action, some vanilla and wood, tart and acidic of course, funk. Medium bodied, acidic with a light sweetness. Good stuff, if only it was a fraction of the cost.

Bottle from Capone’s. Pours hazy off-orangy with smallish off-white head. Nose is Granny Smith apply, tart sour mashy fruit, mild funky and charred oaky notes. Tastes tart, with a very pronounced tart apple and pear flavor, plus significant funky, yeasty, and woody notes.

Color like green tea with abundant fine particles and no head, just scant wispy carbonation. Nice crisp citric and barnyard aromas. Flavor has whole wheat notes, vanilla tones, a waxy element, smooth acidity, and pleasant woody dryness in the finish. Lack of carbonation softens this considerably. Very enjoyable.

Bottled (thanks papsoe!). Golden colour, basically no head. After yeast goes in hazy dark golden/nutbrown colour. Aroma is barnyard, very much sourness as well as some wooden notes. Flavour is dry sour fruity and woodenness along with some mild grass and even a bit vanillaish notes. Some slight acidic sourness stays in the aftertaste. Very nice. Gets more barnyardy and earthy after the yeast is poured in, which also takes away some of the sharp sourness. I like this one better with the yeast in. Numbers for rating are given after yeast is in. Without yeast about 3.7.

Bottled, thanks ante! Cloudy pale golden, no head. Wonderful aroma of cobweb and barnyard. Sweeter than exoected, yet dry of course. nearly no carbonation. Medium bodied with a citric edge. Creamy malt together with stale grassy hops and barnyard. Very good, but I lack some complexity and acidity compared to the very best bottles I had from 3 Fonteinen.

Bottle shared with HogTownHarry, blankboy, jerc, mabel & tupalev - courtesy of jerc & mabel. Hazy red-gold with no head and a still body. Aroma is funky and citric, with some cheesy notes. Thin body with very little carbonation. Flavour of lemon juice and tart apples, quite acidic but oddly refreshing, and a mellow funkiness in the finish. Nice stuff.

Bottle (375ml) shared with HogTownHarry, GregClow, jerc, mabel & tupalev -- courtesy of jerc. Pours a cloudy yellow-orange with no head. Nice funky yeast aroma along with citrus fruit and some sourness. Flavour’s funky, citrusy and juicy -- quite easy to drink. Medium bodied. very good stuff, an easy-drinking Lambic -- nice!

Bottle in Oude Arsenel ... very light hazy yellow ... sour nose ... sour tart some fruit ... much of a sour muchness.
