Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

375ml caged and corked bottle (Bottled on Feb 23, 2006) served in a tumbler. Lightly hazy golden/orange pour with a thin layer of off-white bubbles that quickly disappeared. No lace. The aroma included strong oak, lemon tartness, stone fruit, and also some cheesy funk. The flavor was very woody. Upfront tartness, but not overwhelmingly sour. Medium-bodied and still. Refreshing despite the lack of carbonation. Good, but not as vibrant and tasty as the Oude Geuze.

’06 bottle Pours orange opaque, no head. Aroma and flavor, mostly oak/wood, plenty of tartness fruits; apricot. Thin yeasty profile with low carbonation. Grainy/barrel finish with lingering tart palate.

hazy amber of color with a small white head. An aroma of barn, sour, sour apples and wood. A flavor of wood, no sweets, dry and sour.

looks like my pee after a hard day without much water in the summer. the aroma tells me i’m about to be smiling ear to ear with a delicious pain in my jaw. taste is a bit sweeter and less tart than i was expecting. strong yet well balanced wood flavor from first sip to last. a bit of mango and dried cantaloupe in here that is a treat. sour creeps up as this is drunk down. from a lingering tart at first to a stronger finish that really does remind me of unsweetened lemon juice. a nice one that i can tell lumpy about, because that man needs his uncarbonated beverages.

Darkish gold, only a faint hint of carbonation otherwise still. Aroma has a nice funk, but the wood hits first, followed by a some sweet fruit (peach, apricot) and then a nice leathery funk behind that. Flavor is similar, sweet and tart, with a good semi-dry finish. Really nice.

Still gold pour. Oak, leather, and horse blanket on the nose. Green apple, white grape, barnyard, and oaky tannins. Alot more tart as it warms

Pours orange with no head or carbonation to speak of. It has a sour, woody aroma with oranges, leather, barnyard funk. Very sour flavor with hints of sweetness on the tongue. Its a bit watery with a horse blanket and citrus rind, woody finish. Pretty complex flavor profile. Lambic is still kind of a new style for me. I’m still learning to understand it.
