Aroma is of citrus - orange, lemons, and grapefruit, with strong funky cheese notes. Taste is mildy sour, with oak notes as well. Strong aroma of barnyard pungency and slightly sweet fruitiness (pear, apple, peach) with a dominate lactic note. Clear and nearly still pinkish-orange. Impressive mouthfeel, full-bodied but wholly lacking in carbonation. The flavor is a simple tartness with a touch of fruit character. Enjoyable. The cork had this dried brown material at the rim of the bottle. Cork comes out without any sort of pop. Pours with virtually no carbonation. Mostly transparent apple juice color with no head. Aroma has some sour and acetic notes, with a little floral character, too. A little cidery. Starts initially tart, sour, and acetic. Not too over the top, though. Becomes a little sweet in the middle. Finishes with a rather pleasant saltine cracker-like flavor. No carbonation on the mouthfeel, which is unfortunate. Pipper (251), Ohio, USA

Very pleasant lambic.
