Commercial Description:
Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop

Bottle at Akkurat, shared with Andreasen11 and plovmand. Pours with a golden body and no head. A nice dry aroma of citrus, humid cellar, dust and oak with some sweet hints hits the nose. The flavour has a weak citrus sweetness but is mainly tart, some dustiness comes though along with fruity and woody notes. Not especially bitter.

Bottled on 23/02/06. Pours golden orange color and is totally flat, no carbonaton. Aroma is all funk. Flavor is moderately sour and funky. Medium body with zero carbonation. Good, but I think the lack of carbonation takes a little away fom this beer.

Pours a hazy dark golden brown color with no head whatsoever. Aroma is of citrus - orange, lemons, and grapefruit, with strong funky cheese notes. Taste is mildy sour, with oak notes as well. Finishes relatively dry, with the citrus and fruit notes becoming more prominent to balance the sourness.

Bottle. Strong aroma of barnyard pungency and slightly sweet fruitiness (pear, apple, peach) with a dominate lactic note. Clear and nearly still pinkish-orange. Impressive mouthfeel, full-bodied but wholly lacking in carbonation. The flavor is a simple tartness with a touch of fruit character. Enjoyable. There is a lack of depth, especially in regards to the rounded funky/barnyard flavors common to the style.

Purchased at Perry’s in Livermore. Bottled on 02/23/2006. The cork had this dried brown material at the rim of the bottle. Cork comes out without any sort of pop. Pours with virtually no carbonation. Mostly transparent apple juice color with no head. Aroma has some sour and acetic notes, with a little floral character, too. A little cidery. Starts initially tart, sour, and acetic. Not too over the top, though. Becomes a little sweet in the middle. Finishes with a rather pleasant saltine cracker-like flavor. No carbonation on the mouthfeel, which is unfortunate.

12 oz. at Beer Engine into tulip. Beautiful golden pour (kind of like a cloudier version of the Viking Blod mead), flat of course. Aroma like a slightly funkified apple cider, taste has that same clean bite. This was delightful.

At a tasting, many thanks DSG, no head, murky orangy colour, aromas of lemon vinegar, white fruits, moss and manure, quite sour with some white fruits but a bit one dimensional. Very pleasant lambic.
