Extreme initial tartness has mellowed to reveal an amazing drink, an outstanding aperitif of sumptious fruit. 75 cL bottle pours a deep maroon-red, pinkish-white head fades fast. Huge nose of raspberry--real, fresh raspberry--with notes of lemon and bits of old goat cheese (wish I had some to pair). Incredibly juicy flavor, Intense but reasonable fruity tartness, with a wave of dryness bubbling out of the champagne-like mouthfeel. Cloudy, hazy ruby red body with a small beige head with a slight pink tint. Sour pie cherry nose with cheese, lactic acid, light berry and horseblanket. The flavor is lightly sweet, moderately sour with an enormous amount of sour pie cherries, lots of raspberry, some yogurt, cheese, melon and lemon. Medium body is soft with moderate carbonation. Finish is very long with a lasting pithiness.
