Acidity is there but hidden. Some black cherry soda (not sweet - but that kind of richness) is there. Flavor is cherries, acid, lemon, oak. The fruit is incredibly fresh but the acidity is quite aggressive at the same time. Finish is more cherry than raspberry, a solid woodiness contributes to the dryness. Interesting but seems to be missing something to tie it all together - maybe age? DSG (1501), Tel Aviv, Israel Apr 1, 2008 (3/14/08) After looking for this one everywhere during my 3-week Belgium & Amsterdam trip, turning down one in Verzekering tegen de Grote Dorst early in my trip in hope I could find it easily elsewhere, and disappointed by the fact that the guy in Moeder Lambic couldn’t find any more bottles (for 25E) in the cellar, I was thrilled to find this one for 11.5E (!!!) at De Bierkoning in Amsterdam. Bottle drank at a friends’ house in Amsterdam. Deep red color with a small pinkish head. Magnificent raspberry aroma with some earth and barnyard. Wonderfully tart berries flavor with some citric notes, wood and earth. Great mouthfeel. Pours hazy red-purple, with a moderate-sized pink head. Intense raspberry aroma, with hints of leather, sour cherry, and wild yeast. Moderate lactic flavor is nicely complimented by raspberry. Wild yeast, cherry pie flavor and oaky notes add to the complexity. The raspberry works exceedingly well in this lambic; when it hit my palate it tasted and felt like i was eating fresh raspberries. Pours a bright and slightly hazy rosey red with a moderate pinkish white head that drifts down to a plump ring, minimal lacing. Aroma is a face full of lovely funk; sour and tart, with seemingly more cherry presence than raspberry, but both are there and work well together. Flavor is more funk; tart and sour, bringing out more raspberries with the cherry dropping more to the background. The sour and funk is well placed in this one, with just enough to get the point across while avoiding having too much to detract from the excellent fruity aspects. Not overdone, well balanced and quite drinkable all the way through. Thanks again Mike! Smell: Tart, sour aroma layered with a wonderful raspberry and cherry fruitiness along with notes of a dank, dark cellar inhabited by a leather-clad Mold Monster.
Taste: Fruity from the get-go with flavors of raspberries, sour cherries, and maybe even a few chunks of seedless watermelon all centered around a lactic sourness. A drop of vanilla, a touch of wood. There’s never much in the way of sweetness, but you do get a good, hearty dose of barnyard funk. Finishes dry and sour with a lingering fruitiness. Mercifully, it’s never overly tart or sour.
Mouthfeel: Medium-bodied. Mild carbonation.
Drinkability: Fairly mellow and easy-going for a lambic. Hazy and deep red in colour with a medium sized pink head. Quite fruity with notes of raspberries, strawberries, cherries, earthy moldness - lightly sour and hints of vinegar. Good. rederic (1785), montréal, Quebec, Canada Feb 28, 2008 Slight mercury-red hue, with a pinkyish-white head, but falls quickly, nice barnyard, musty, wet oaky, fruity nose of faint winey, acidic raspberries and cherries tartness, with a leathery, horseblanket funkiness, with some hints of sour rhubarb, and lactose in the aroma follows through on a medium-bodied palate with a very nice wild yeast, brett funkiness, acidic, tart, fruity sourness character, of delicate raspberry and cherry mustiness, with some tannic notes of cherrystone, with a good carbonation, the mouthfeel seems less dry, than a cantillon rosé de gambrinus, but leading towards a fruity, acidic, raspberry tartness, sharp finish.
