Extreme initial tartness has mellowed to reveal an amazing drink, an outstanding aperitif of sumptious fruit. 75 cL bottle pours a deep maroon-red, pinkish-white head fades fast. Huge nose of raspberry--real, fresh raspberry--with notes of lemon and bits of old goat cheese (wish I had some to pair). Incredibly juicy flavor, Intense but reasonable fruity tartness, with a wave of dryness bubbling out of the champagne-like mouthfeel. From a 750 ml bottle pours a reddish amber brew with a fizzy pinkish head that really sticks around. Aroma of tart berries, strong yeast and with barnyard funk pungent. Taste is sour cranberry, quite sprittzy with additional flavors of tart raspberries, yeast and mallberries. Beautiful bright pink pour with no head. Nose and flavor were tart cherries and raspberries that finished smoothly with toasted almond and oak dryness. A real treat! Tart berry aroma with mild sweetness and some funk. Flavor really incredible and long-lasting, tart yet slightly sweet raspberry and cherry, maybe some other berries, and wood. Palate awesomely dry and sharp. An awesome fruit lambic overall, one of the best I’ve tried yet.
