Commercial Description:
This is a special brew that Brewmaster Glen Sprouse first formulated and brewed for his wedding in 2001. It is brewed with a Saison yeast that is very attenuative. It is also dosed with a british ale yeast late in primary fermentation to "clean it up a little" and then an Abbey yeast is added for secondary fermentation. The base malt is all German Pilsener and Munich Malt (as is the typical practice of most of the high quality Belgian brewers of pale beers) with a bit of red winter wheat thrown in for body and mouthfeel and just a touch of coriander for the finish. We use a little Belgian Light Candi Sugar and a little Special B Malt to add to the Belgian character. Five mash rests are employed to improve the clarity, pH and distribution of sugars. And, four hop additions are made in the boil using a combination of German, Styrian and Czech Hops. This beer gets considerably better with about six months to a year under its belt. 5 Seasons will be serving it throughout this period, slowly meting out the kegs on a monthly basis to ensure it lasts until next year's batch is ready.

On tap at the restaurant. My favorite of the trip. Smells of banana and passion fruit (as the beer’s description promised). Reminds me of a Belgian wit in the yeasty quality of it, how light it is and gently acidic and crisp, with lemon flavors in the middle and corriander, and maybe a little allspice. Lots going on in the mouth. Finish fails to close the deal, but a good beer to enjoy on a hot day.

Opaque amber, full fine head, solid lace, sweet spice aroma, lots of banana, rich sweet malt flavor, lots of banana, hint of clove, dries out upon warming picking up some alcoholic hotness, the banana recedes, the clove comes out, and a touch of bitterness appears in the finish

Tap. Sweet peach/apple malt aroma. Hazy dark orange amber color with small head. Sweet peach malt flavor with moderate white pepper/alcohol notes. A superb beer - much sweeter than most saisons but still a joy to drink.

This ale is a dark honey-golden with a reddish cast and a little cloudy. Aroma is mouth-watering - rich and malty, with hints of apple, pear and even banana. Flavor is just as delightfully rich as the aroma, mainly malty with strong hoppy undertone and a touch of fruity sweetness. Finish is zingy and very pleasant. This is probably the best brew I have ever had at Five Seasons.

Sample from a growler dated 6/15/05 and numbered 67/180 @ DLD 4/28/07. Shared by kp? Pours a hazy light orange with a thin white head. The aroma is citrus and yeast with hints of floral and spices. The flavor has some maltiness along with the fore mentioned aromas. This one is a little on the thin side in terms of mouthfeel.

2004 version. DL 06’ courtesy of TBC2. Medium brown, white head. Huge floral up front, with light sour/tart fruitiness and yeasty/bready backbone. Flavor much the same, with some residuel or candi sugar. Very soft/delicate mouthfeel. Might not be exactly to style, but come on it’s saison. Nice brew overall.

Serving: Sampled from a 1 liter flip-top bottle dated 6-15-05 and numbered 67/180.

Tasting Notes
Aroma: Citrus fruit, yeast, some subtle, nondescript spiciness.
Appearance: Cloudy orange color with a thin head.
Flavor: Very much like the aroma with some earthy maltiness underneath and some lemon and citrus hop flavors coming through.
Palate: Medium-light body, but a bit thin in the mouthfeel.
Overall: Decent Saison with more malt sweetness and flavor that expected. Definitely worth having again...

Thanks to Boboski. Apparently the bottle i got was a couple years old? We think it was starting to turn, glad we opened it when we did! Spicy sour aroma. Pours amber with a white head. Very malty, creamy. Very interesting for a saison, reminds me of their french cousins, still very enjoyable beer! Thanks Bobo!
