Commercial Description:
This is a special brew that Brewmaster Glen Sprouse first formulated and brewed for his wedding in 2001. It is brewed with a Saison yeast that is very attenuative. It is also dosed with a british ale yeast late in primary fermentation to "clean it up a little" and then an Abbey yeast is added for secondary fermentation. The base malt is all German Pilsener and Munich Malt (as is the typical practice of most of the high quality Belgian brewers of pale beers) with a bit of red winter wheat thrown in for body and mouthfeel and just a touch of coriander for the finish. We use a little Belgian Light Candi Sugar and a little Special B Malt to add to the Belgian character. Five mash rests are employed to improve the clarity, pH and distribution of sugars. And, four hop additions are made in the boil using a combination of German, Styrian and Czech Hops. This beer gets considerably better with about six months to a year under its belt. 5 Seasons will be serving it throughout this period, slowly meting out the kegs on a monthly basis to ensure it lasts until next year's batch is ready.

Murky brown/gray/rust with a modest, frothy, darker off white cap. Subdued aroma of spicy doughy yeast, musty funk, and subtle vinegar. Flavor adds earth, dry wood, berries, grains, light sourness. Unique taste. Smooth medium palate. Very tasty, original brew.

Sampled at RBSG06. Clear amber color with a thin white head. Sweet fmalty aroma, hints of caramel. Sweet spice with a light malt ending.

1L bottle - Clear amber with a white head. Yeasty spicy with sweet grain backing it all up. Sweet grain in the flavor starts things then the spice and some acidity kick in. Firm attenuated mouthfeel. Decent Saison.

Thanks to goldtwins for this one. Bottle 68/180. Very cloudy, yeast brew, thin white head. Very estery and sweet, bubble gum, black and white pepper, apple/pear, yeasty and bready. Strongly peachy flavour with some light raspberry aromas as well. Very yeasty and fruity. Heavy minty aroma/flavour through the finish. Cooling sensation. Very nice beer.

This had a light gold body. The aorma was sweet pears with cinnamon and some sweat. The taste was sweet apples with some spicy cinnamon. There was also some brown sugar in the finis. Good and sweet, an interesting twist on this style.

Muddy beige colour. Footy, yeasty aroma. Flavour is toasty, earthy and assertive with hints of late acidity. The yeast sits a bit heavily on the palate and the malts aren’t bright enough but it’s a decent saison.

bottle sample at the Hampton tasting - Pours a hazy deep gold with a medium, lasting head. It has a very pleasant fruit and yeast aroma. The flavor was moderately sweet with considerable citrus. The palate was lively though a bit thin, and the finish was at once sweet and mildly hoppy.

2004 Bottle thanks to TBC2: Medium brown pour, thin white head. Lots of apples in the aroma, some spices. Flavor follows the aroma, interesting beer.
