Commercial Description:
This is a special brew that Brewmaster Glen Sprouse first formulated and brewed for his wedding in 2001. It is brewed with a Saison yeast that is very attenuative. It is also dosed with a british ale yeast late in primary fermentation to "clean it up a little" and then an Abbey yeast is added for secondary fermentation. The base malt is all German Pilsener and Munich Malt (as is the typical practice of most of the high quality Belgian brewers of pale beers) with a bit of red winter wheat thrown in for body and mouthfeel and just a touch of coriander for the finish. We use a little Belgian Light Candi Sugar and a little Special B Malt to add to the Belgian character. Five mash rests are employed to improve the clarity, pH and distribution of sugars. And, four hop additions are made in the boil using a combination of German, Styrian and Czech Hops. This beer gets considerably better with about six months to a year under its belt. 5 Seasons will be serving it throughout this period, slowly meting out the kegs on a monthly basis to ensure it lasts until next year's batch is ready.

I have to say Glen sure knows how to brew beer. This is right up there with the really special Belgiun Ales that I’ve had. Nice and tart with a spicy yeast taste. This is an epic brew. Almost worth the trip to Atlanta.

Medium orange color with nice sized white head. Spicy nose of corriander, yeast, and light honey. Taste was the same with malty finish. Somewhat sweet and sticky. Very rich on the palate for a saison.

This was absolutely delicious! For once I could not agree more with the commercial description. A beautiful deep orange hue is present here, with a small sticky white head. Full of lots of lighter fruits in the aroma, with a palate that is somewhat yeasty , with some lighter candi sugar flavors and just a hint of sourness in the finish.

My Bottom Line:
Honeyed biscuity maltiness tends to dominate the hoppiness in this lean and clean Saison where coriander spiciness and its ensuing orangey fruitiness are intelligently used in small doses.

Further Personal Perceptions:
-A slice of foam covers the lightly hazy blond.
-I thought this was rather sweet for a Saison, but I don’t know how old the bottle was; maybe the hop character was fading out.
-Carbonation was appropriately active yet smooth.
-The finish was lightly hopped, and proffered more malty cleanliness.

Hand bottled by the brewer and given to me by Goldtwins over a year ago. Pours a copper color. Phenolic nose with a corny maltiness. Astringent and spicy. Somewhat mead-like for some reason.

On tap at the restaurant. My favorite of the trip. Smells of banana and passion fruit (as the beer’s description promised). Reminds me of a Belgian wit in the yeasty quality of it, how light it is and gently acidic and crisp, with lemon flavors in the middle and corriander, and maybe a little allspice. Lots going on in the mouth. Finish fails to close the deal, but a good beer to enjoy on a hot day.
