Commercial Description:
This is our Christmas and Holiday beer! A deep red/brown Abbey Ale often called the Burgundy of Belgium. Its a rich but crisp Trappist style dark ale with a flavor like no other beer. It is brewed with a special Belgian yeast that imparts fruity and almost wine-like flavors and aromas due to aromatic esters and complex alcohols that are the byproducts of fermentation. Very aromatic and slightly malty with some residual sweetness and tartness and a low hop bitterness/aroma. This is a warming high gravity beer made to be sipped and enjoyed in the colder months.

Banana and vanilla in the aroma. Pours a light brown. Nice brown sugar, some fruit, a little spice. Maybe a little light for a dubbel, but i could have drank it all night and been very happy!

Pour is hazed dark brown with a dense sticky tan head...smell was yeast, licorice (anise), some cherry and raisin...taste was too much licorice...seemed very odd and out of balance...no real yeast flavor at all...not even very much sweetness...just a buttery spiciness...

From 750mL Bottle. Deep, cloudy, mahogany brown pour with a nice creamy beige head. Estery aromas of bubblegum and soft, dark fruits. Creamy, full bodied mouthfeel with a silky smooth texture. Woody flavors of a light corona cigar and some chewy caramel. Some raisiny chocolate flavors round out the creamy finish. Very nice, tasty example of the style. Thanks, Sammy!

Big ups to Glen for pulling out a vintage bottle of this one for us. Very nice, very subtle flavors. Fruity and slightly sweet. Nice malts to add complexity and balance. Good job guys.

Bottle ala Nathan. Hazed dark copper color with a small dense head of light tan bubbles. LIght butter caramel and butterscotch in the flavors. Not much yeast character for a dubbel.

1L bottle from 2004, from in person trade with thebeercellar2 at Dark Lord day. Chewy caramel, dried fruit: raisins, sweet and aromatic with just a hint of roasted grains. Dark, murky amber in color with an off-white head that thins a bit. Flavor is off from the nose, there is a toasted caramel, dried fruit and some oxidized flavors that reminded me a little of a smoked beer. Medium-full body that manages to coat the mouth with sweetness but finish almost dry.

Deep, translucent and amber lacquered mahogany colored body with a thick, tightly packed creamy tan head with lovely, beady vellum lace. Complexity’s a comin’ in the nose - golden raisins meet golden fruited figs, brandy plum sauce and apple graham cracker crust, prunes fornicating with nutmeg and an enhancing, sublime maple cream current coursing throughout. Big flavor realm reveals branded leather, chocolate scratched cigar wrappers and slightly scorched pecan casings. Effervescence is perfectly well-honed, encapsulating and pummeling the flavor to all corners of the mouth. Prunes and applewood come out with an enhancing tongue flick, falling back to an english toffee caramel-like smoothness, and a nearly silent echo from cocoa. Cocoa butter and nutella gloss over dark pitted plums and a fairly full-bodied concrete stream. Bitterness peaks the curiosity within me to envelop the over-arching character. Cocoa blended cottonseed oil cakes the palate at the outtake, subsiding with chocolate crème brûlée and plum pudding in the end. Thanks for sharing the big bottle, hezron!

Tosa Tasting - June 24, 2006

Thanks to hezron for bringing a 1 liter hand bottle to the tasting. It was the start of many good beers over the rest of the night. If I ever make it to 5 Seasons I hope they have this on tap.

Aroma / Appearance - Sweet chocolate, toffee and caramel dominated the nose. The body was a beautiful caramel brown with a tan one-fingered head and clear sticky lacing that dripped gracefully down the sides of the glass. This is one of the best looking doubles I have seen.

Flavor / Palate - The first thing that comes to mind after taking a sip is alcohol. It kicks you in the teeth before yielding to a roasted coffee flavor sitting on top of a dry malty layer. Caramel, toffee and a sweet yet undescribeable burnt consistancy come next. Finally towards the end I picked up on a candy sugar and honey combination. Solid and full bodied throughout the entire glass, this had an excellent presence. The alcoholic bite could have been a bit more balanced and subtle but otherwise it was thoroughly enjoyable. This is exhibited by the fact I was still enjoying traces of it five minutes after the last sip as it slowly faded into nothingness. Give it a try if you can track it down - it’s well worth the time.
