The nose is a malty, breadsy swirl of praline, toasted nuts, fruit cake and just enough smoke to take it to the next level of interesting. Sweet bready dark Belgian malty aroma has good caramel toffee notes. Palate is sweet and viscous full of Belgian malts and has a nice yeasty authenticity with a subtle earthy tartness toward a sweet finish. Nicely balanced and lightly complex with a slight black peppery spice.
1L bottle, dated 8-11-05: Pours a muddy dark copper mahogany with a large, forthy light tan head. Has a rich, sweet, malty, complex and authentic bready Belgian yeasty aroma. Body starts with a pleasant light malty sweetness, lots of bubbly carbonation some biscuity character, a touch of bubble gum and doughy yeast toward a sweet toasty caramel finish. Very dark for just a straight up belgian, this was a little more like a dubbel to me. The aroma has a nose of dark fruits with hints towards the noble hops and candi sugar sweetness. Lightly yeasty and spicy at the same time. The flavor is wet with the sweetness of the sugar and esters coming through at the end. The finish is well balanced and leans a little more towards the hops at first but sways into the sweet malt. This was a great ale, one of the most complex I've had. Like I said, this had the flavor profile of almost a dubbel, so it was great to drink with food.
