12oz bottle-pours a foamy to rocky tan head and amber color. Aroma is medium malt-some sweet (English) nutty, secondary citrus hops. Taste is medium malt-some sweet (English) nutty/some chocolate, secondary earthy/metallic hops. Occasional. OK/mild carbonation.

12 oz. 2004 bottling pours a clear amber hue with an off white head. Nice malty, yeasty sweet bread smell. Medium bodied with a smooth mouthfeel. Has a tasty sweet malt and grain flavor, mildly hopped .Finishes slightly bitter. A very smooth, easy drinking brew.Dec 2004

Clear copper amber, modest white head with poor retention. Caramel aroma. Caramel flavour, a little nutty, a little hoppy (earthy leaves). I brought a couple of these back with me to have during the holidays. Where’s the Christmas in this?

Light cocoa powder, grassy faint citrus hops and perhaps a light sweet spiciness in the nose. Clear amber brown coloured body sports a quickly receding off white head that leaves a ring around the edge of the glass. Nutty and toasty malts with herbal hops, light spices and perhaps a touch of fruit character. Dry body with somewhat low carbonation. Somehow this isn’t the celebration I was expecting from Christmas in the Big Easy. Bottle sampled with Beershine and Oakes.

Bottle poured rich toasty chestnut brown with about an inch of slow dissipating tan head. Aroma of caramelized roasted malts. I get toffee flavor with mild bitter dry finish. A bit thin but tasty.

(2007 Season) Poured from a bottle into a pint glass. Produced a slightly cloudy amber body with a small off-white head which quickly diminished to a white ring. A light, but not unpleasant nose with notes of chocolate and hops. This ale has a light bitterness with fairly decent mouthfeel (medium body and carbonation). This seems to be a fairly well balanced ale with good hops and heavily toasted coffee notes at the end, though it is somewhat overpowered by the carbonation. This ale seemed to improve as the it warmed which brought out it’s character. Not bad at all.

Found this one at Binny’s in St. Charles, Illinois. Nice ruby red, clear pour with a medium tan head. A sweet nose with some spiciness, follows into the taste, balanced with a sharp, hoppy finish. Pretty good. I am enjoying this season of Christmas brews.
