Pours the color of pure amber with rather large suspended chunks of caked yeast. Starts with an initial dense creamy slightly off-white head that settles to a blotchy skin with sticky lacing. Nose is very delicately fruity and flowery, with crisp pear and apple qualities, and a sweet white grape varietal. There’s also a complex grainy caramel note to the nose, one found only in trappist brews. Gently effervescent on the palate, with further grape dimensions, semi-sweet honey, lemongrass, fresh baked cookie, and a faintly lingering slightly medicinal herbal bitterness. Loads of citrus and yeast. I really like it, very drinkable. Very airy body with tons of carbonation. Malty, floral nose with lemon zest, orange peel, spices (coriander?), jasmin and grass. Malty, fruity taste with orange, lemon, dried fruit, herbs and honey. Fiery alcohol shines through in the middle, giving way for a spicy, almost peppery, dry bitterness in the finish. Maybe not as complex as many other trappists, but with lots of character and punch. A darkish golden color with a rocky white head that just won’t go down. Medium body with fizzy/creamy carbonation. The flavor is citric, acidic, followed suddenly by light malt and candi sweetness. Yeast and orange peel notes. Flavor is sweet with fruits, yeast, orange peel, coriander and roasted malt. Slight bitterness in the end and a warming alcohol touch. Perfect balance. Very nice
