Something about the flavor makes me think that this is a wheat-based recipe. They also obviously used a belgian yeast given the types of ester and phenols I'm picking up in the flavor, but I'm guessing it was fermented fairly cold since the yeast flavors are very muted. It comes off as timid, like they were afraid to test their patrons with the flavors of a true Belgian. I still enjoyed it, though. Slight bubblegummy esters with a little apricot or peach.
