I must be a little vague here...tastes like an Abbey tripel with bourbon in it. Aroma of vanilla and yeast. Pour was a medium to dark brown with no head. Tastes like a tripel with an alcohol burn of boubon and wood and malt in the back. Hard to put in words after you split 2 bottles of this with a friend, but there you go.

August 2006 bottling...Big bourbon taste, mouthfeel somewhat less than fizzy, this one is a lot like the Odyssey, only not as dark and rich. Flavors of vanilla and wood, some apricot. Overall not bad, I may re-rate on a later date.

These notes apply to the Jim Beam bourbon barrel version. 750 at the Seattle International Beerfest. Smells bourbony without a doubt, but there’s sweet caramel and candi there too. The bourbon settles out after it’s been open for a few minutes. Cloudy orange/light amber pour. Thin off-white head. Medium, somewhat oily body, lightish carb. Bits of hay, lemon, and pear on the mid-palate. Tangy, sugary cling with oxidized apples on the finish.

[75 cl corked bottle] Pale, hazy orange colour. Thick, creamy head. Strong bourbon vanilla aroma. Flavour is......well...like a typical Belgian Abbey Tripel aged in bourbon barrels; fruity and yeasty with strong bourbon vanilla character. Well crafted, sure, but I really don’t like bourbon.

Sampled most recently on draft at Capone’s (Norristown, PA) during the Allagash promo on 6/19/07. Hazy yellow, with a moderate sized off-white head. Complex aroma, fruit, oak, whisky, and yeast most notable. The wood aging adds some interesting flavors, like tropical fruit, whiskey, oak, alcohol, and yeast. Delicious beer, but I think the alcohol overwhelms the other more delicate flavors.

Tap @ Publick House, Brookline, MA. Woody and vanilla notes in the aroma. This beer was very balanced when cold, but as it warmed up it began to taste almost exclusively like bourbon. Definitely one of the most unique brews I’ve ever had.

Bottled at Københavnske Øldage. (11%) Poured a bit unclear, golden-orange, with a white head. Quite sweet nose, with a decent amount of spices, especially coriander. The flavor is sweet and fruity, with alcohol and spices. Full body and a long spiced finish. The beer felt a little bit brutal, but it is a nice beer. (070511)
