Draft at coopers. Poured a golden colore with a nice big off white head. Aroma is of sweet belgian sugar and some oak. Taste is hige on the alcohol with mild oak and sweetness through out. Not bad but needed more time.

On tap at Brouwer’s Big Wood ’09. Orange pour with a moderate white head. Aroma is very much like a granny smith tart apple cider with a touch of something reminiscent of champagne. The flavor is not as sweet as I would have expected from the aroma. The apple sweetness still exists, but I get much more spicy yeast, bourbon, honey, and a very dry, woody finish. Quite tasty, but I felt putting this in a bourbon barrel overwhelms the flavors of this tripel a bit too much for my taste. Still, this has a nice complexity regardless of that.

Cloudy orange-yellow, lingering white head, good lacing. Aroma is of apples, some sweetness, light yeast. Flavour is very candish, quite malty, high sweetness, fairly smooth. Finished long, light alcohol, sweet.

Very candish but pretty good.

750ml bottle.
Opened March 2009.
Bottled in September 2007.

This is another tripel that has gone become very vinous... this is the newer 2009 bigger abv version. Golden with white foam and chardonnay aromas. subtle wood, nothing citric, the body is light medium and it’s still very delicious but definitely not the deeper, more floral beer of past vintages.

750ml bottle that was bottled in Feb. 2009. Poured a cloudy orange with a thick tight white head . Aroma was wood, yeast, biscuit bready and earthy. Some slight bourbon hints on the nose that really came through in the flavor. Very smooth beer with a lot of complex flavors. Very nice.

750 ml cork and caged bottle shared by EDA right out of his cellar, the sickest cellar I have ever seen might I add. Poured a slightly hazed nectar golden body sitting underneat a smaller foamy white head. Aroma starts off with lots of fruit (white grapes, pears, greeen apples), old fermenting honey, wood and slight alcohol. Flavors of oak, honey flavored wax, grains, vinous chardonnay notes which is odd because this was aged in Jim Beam barrels and not wine barrels. Medium body with lively carbonation for a barrel aged beer and noticeable alcohol heat but not too much for an 11%er. The aroma is the strong part of this beer and unfortunately the flavor drops off slightly.

Pours a muddy yellow with a nice white head that stays around and laces nicely. Aroma is earthy yeast bread like with a hint of whiskey and wood. Flavor is sweet on the front with some spices. Back end is whiskey and some of the wood. Finish is delightfully warm and dry on the throat begging for another sip.

A deeply complex ale here. On tap at Blind Tiger. Pours a nice, hazy yellow with a thin white head. Aroma of yeast, alcohol, some spices and fruits. Flavor has a diverse character, with notes of vanilla, bourbon and some coconut. Nice, warm mouthfeel. A good bit of sweetness on the finish.
