Pours a nice amber with a thick and creamy off white head. Aroma is more muted than the other quadrupels I’ve had: st bernardus, rochefort, westy 12, but is still nice. Chocolate, slightly earthy yeast, dark fruits. Taste is earthy yeast, minerals, chocolate undertones, dark fruits plums raisins. the finish is very clean, with some alcohol warm. This was a great effort, and I agree with my friend’s opinion: Tastes like a new world take on an old world style.

Pours amber with creamy offwhite head. Aroma is caramel and citrusy hops. Nice dark fruit aroma that carries into the flavor. Nice creamy/sticky mouth. Finish is sweet malt and bitter hops. Nice true to style quadrupel with a little extra hop charater.

Bottle. Pours a ruby red color with a foamy/soapy looking head that fizzed a ton. Nose was spicy (vanilla) and malty and smelled a little bit like limes (seems odd) and sour cherries. There was also a little alcohol in the aroma, and not nearly as much as I’d expected. Great creamy flavor (butter and toffee) that has excellent body with sweetness up fron that gives away to bitterness and then alcohol. Definite cherries in the flavor, and maybe even a bit nutty. Mouthfeel is thick and full, but a bit more oily than I personally like, great bubbles though.

Mine exploded like a shaken champagne bottle. Fortunately, applying direct pressure staunched the bleeding for the most part, leaving me with only a neck full of foam. It poured surprisingly gently after that, medium brown with only an average head. Aroma was earthy, with a hint of sweetness, also spices, yeasty goodness and other trace scents that I couldn’t identify. In the mouth, it started with a hint of sour. In the mouth there’s definite sweet and spicy, followed by a balanced finish, earthy and dry. It’s a little oily in the mouth, with moderate to full carbonation. A hint of alcohol warming. Nice brew.

Bottle, corked. Dark amber, nearly to the point of brown but not quite. Garnet highlights. Decent foamy tannish head. Sharply fruity and a bit fizzy on the nose. Definite cherry notes. Soft cherry and even some coffee on the attack, with a soft, sweet mid-palate. The body’s not too much above watery, with the carb definitely on the fizzy side. The finish is sour and dry with a hint of bitterness.

Bottle. Very dark pour, good ammount of head. Fruity smell. Malty taste, harly any hop flavor. Not bad, not my fav.

(05.08.06) One pint, 9.4 oz brown bottle from DiCarlo’s, Mundelein, IL. 10% ABV. Poured hazy reddish amber with small white head. Honeydew melon aroma. Soft carbonation. Full-bodied Belgium-style quadruple ale that starts with moderate malt sweetness and fruity (honeydew melon or green grapes) and spice flavors. Some sharpness (carbonation?) in the mouth. Finished with light malt fade and some hop bitterness. Well-balanced and rich tasting. Complex flavor character. Definite alcohol warmth but the alcohol component is well hidden in this flavorful beer. Delicious.

Carbonated murky brown color with quick tan head. malty roasted aroma. Prunes and malt again in the taste. Carbonation and alcohol tickle the back of your throat. Very good and interesting beer. Smuggled back from home a couple of weeks ago.
