Yeast and spice in the nose with notes of chamomile and fennel. Flavor is more chamomile and maybe a bit of lavender along with fennel and bread. Slightly sweet. Some astringency. grat (433), ST. Bubblegums, coriander and lavender in the nose. Slight green edge. Similar to cilantro or flat leaf parsley but too sweet to classify it as such. The aroma reminds me of what De Dolle’s house yeast smells like or maybe even a pale shadow of Rochefort 8. Lighter malts keep the sweetness much more caramelly though. On the tongue this beer shines. Coriander bitterness. Sweet citrus edge, acrid hop bitterness. Very belgian on the uptake. Incredibly like de Dolle. however the lavender crashes in nicely. Bit of honey, cinnamon. Tastes like a belgian Schlitz, but not bad. (though its probably been 30 years since my last Schlitz) Limes, Lipton tea, apple; almost no sweet. Carb is there but sort of flat. Dry finish with a little bitter and a little pucker. Medium to light body. Finally get a big hit of spice and sweet with dregs sipped from the bottle.

I have a problem with insanely strong belgians sometimes because the insane sweetness wears out my taste buds. But anyway, this beer really works well. It is certainly a very drinkable belgian. I have had Four before, so I had high hopes for this and i certainly enjoy it.
