Aroma is fruity and sweet - ripe golden (passion) fruit, spicy yeast, honey. Taste is banana and ripe golden fruit, honey sweet malt, and a crisp, dry, slightly bitter yeast spiciness. Finish is dry and yeasty with a bit of alcohol, and a faint, balancing bitterness from the yeast and alcohol, and maybe a slight herbal hop undertone. Carbonation is crisp, with a creamy, medium body. Really a fantastic tripel. Phenolic banana-clove nose with prickly spiced notes and some bold booziness. Crisp malt underpinning. Alcohol well masked. Funky yeasty wheaten complexity. Great example of the style. Yum! Big aroma of banana, spice and a little alcohol. Phenomenal flavour, well balanced with spice and sweet. 9% ABV very well hidden. Outstanding Belgian style tripel made in the States. The aroma is definitely sweet and yeasty, apricot, banana, burned sugars, coriander, and alcohol. The flavor is very balanced with herbal bite alcohol and sweet finish. It’s a rather reserved tripel.
