Pours very dark with a dark burnt orange head. The aroma has a ton of bourbon, some cream, vanilla and milk chocolate. Thick body with soft carbonation. The flavor starts with a nice blend of bourbon, roasted malt and green apple. The finish is a bit sour. An okay beer that is fine for the style and price.

Bottle: Poured a thick black with tan color head. Aroma was strong bourbon, roasted malt, and dark chocolate. Taste was roasted malt, chocolate, and slightly hoppy at the end.

Bottle. Pours black as night with a thin cream head. Very strong bourbon on the nose, a bit of vanilla too. Very smooth, great bourbon and oak flavors. Alcohol not in your face. Good beer!

Had on tap in Elgin at BREWFEST 2006. <!-- p --> Dark black with a fairly large brown frothy head. The nose is sweet with malts and sugar. The taste is mostly that of a sweet stout but towards the end there is a present bitterness from hops. Smoothe and silky creamy with some coffee towards the end. Just a dab of chocolate. Ovearll pretty good but I would like more imperial from this imperial.

Good Imperial, satisfying without being overpowering. Great pour, deep black with a creamy chocolate head that does some amazing lacing. The aroma is full of roasted barley and barley malt, bittersweet chocolate, coffee, and a hint of woodiness. Very thick and creamy in the mouth. The aroma is reflected in the flavor, and the drink finishes on a dry, slightly bitter note. Nice balance. Very good drink.

My only complaint is the slight fecal aroma (fleeting) at the beginning of the drink. -- Kidding. Mike Rybinski, brewmaster, showed me some of the judges’ remarks from a contest that some of his brews had been entered in, and this utterly ridiculous comment was on one of the cards.

On tap at Goose Island Stoutfest as "Walter Payton’s Roundhouse Imperial Stout". This was not the bourbon-aged release. Poured a lovely shade of black with a medium creamy caramel head. Nose picked up the usual (and hoped for) suspects... roasted bittersweet chocolate, coffee, and some dark fruit. Flavor was about the same, but felt as though some almost artificial sweetness was added (not bad, but odd). Finish was of medium-length with roasty chocolate and coffee. Smooth on the palate with well-placed coffee bitterness at the edges. Very tasty brew all-around.
