Clear darker amber with small off-white head. Aroma is aged alc with slight dough. Flavor is very doughy with alc, malty, caramel, bourbon, green/red apple. Medium to full body and creamy. Amber color with no head and light carbonation. Some melanoidins. Nice mellowed flavor from some aging. No oxidation. Leans sweet. No hop bitterness. But I do like this beer. It is flowery and joyous, but solid in delivery. BDs III starts a tad on the sweet side, but it rewards you with richness and depth as you proceed. The nose is subdued, slightly spicy, with cream and spark, but you can tell that that a party lies beneath. It starts as a solid beer that becomes more like a wine, probably due to its high ABV. In any case, this is a favorite of mine for a quick pick up at the Co-Op (one bottle, two tops) for an evening of holy contemplation and generally good cheer. 00cobraR (1102), Greensboro, North Carolina, USA

Light smell of apples, spicey yeasts.
Good carbonation despite the complete lack of a head, medium bodied.
Has a raw, sweet and spicey flavor of apples, dark pit fruits and yeast. Not much of an alcohol burn here thankfully.
For the Tripel style this brew is way out in left field.

Pours a bourbon color with an off-white head. Aged caramel malts in the nose. Older caramel malts in the flavors. Grains, red fruit, alcohol. Tastes like a strong aged amber with too much alcohol.
