Slight to moderate infection, probably lactobacillus, although I think it makes the beer more interesting. Aroma of barnyard, nuts, cherry, raisins, and tart acidity. Taste is light toffee, earthy malt and tart lactic acid. Mouthfeel is light to medium bodied with lush carbonation, although the bacteria might have thinned this out a bit. Hops minimal and noble. Light ester production yields a slight mineral profile to the nose. Pleasant ruddy brown pour, lightly hazed and with a well-retained mixed soap of banana flesh. Flavor initially produces a vegetal sensation, some yeast meat, and a lightly astringent grain definition. Malt plays as lightly nutty, there maybe be fair amount of diacetyl here, and some off esters. Hops are minimal in the flavor profile, with a light euro grassiness. Balance is misaligned by the grain astringency. Lightly sweet. Malt flavor not well defined, rich, or enjoyable enough. Finishes salty. Mouth feel is a bit thin and watery. Glassy. Carbonation is on par. No real warmth, which is fine. Astringency real blows this beer out. Generally, there’s not enough desirable malt character. I want something beaming with caramelization, toast, and nuttiness. This has light washes of that, but nothing that I would get excited about. Very lackluster. Yeast and ester profiles only confuse. This beer gives me a sense that the ingredients weren’t worth using. Very mediocre.
