Commercial Description:
Aspall Suffolk Cyder is made from a blend of different "base" cyders. These cyders are all fermented using the same basic technique. All Aspall Suffolk Cyder is lightly sparkling. This has the effect of lifting the aroma and flavour, so complimenting the experience.

2008 bottle with probably 4-6 months of age on it. The bottle is identical to the label pictured here however, the box has Premier Cru on it, so I’m not sure that the two arent one and the same. Anyhow, I was pleasantly surprised with this one, despite the obvious filtration and forced carbonation, it’s not overly fizzy (given some breathing) and has plentiful wild yeast character. The finish even ends with a nicely tart acidity that removes all the sweetness from the mouth. The aroma has notes of chardonnay and peaches, though white grape juice prevails lightly on the finish. Bits of doughiness and hay mark the opening flavor profile, which grows quite acidic as I mentioned, leading to a unripened nectarine/apricot fruitiness and vibrant green apple crispness. No alcohol noted. Very light in color. Clear. Moderately watery mouthfeel as the carbonation recedes.

Pours a clear watery yellow color with a white head. Aroma is sweet sugary apples. Flavor is sweet apples, some carbonation, and a sweet sugary finish.

fairly dark pour of golden with a short lived white head. smells of apple blossoms, fragrant bruised bins of apples, must and some spice akin to cinnamon... the flavor reminds me of an apple lambic?... tart and dry yet fruity type sweet... dust, red ripe apples, cement-y earthy funkiness and white bloomy mold (it’s not as unpleasant as it sounds!). there is not much else as it is a bit bland. sharp carbonation makes for a refreshing summer brew. 6/3/6/3/13/3.1

Pours plain yellow with a small head that disappears quickly. Less carbonation in this one than in the Aspall Medium. Flavor is like smooth cheap champagne, yet more "appley" of course. Not much more to describe here since this falls into the catgory of common mediocre cider, unlike the Aspall Medium which was truly a step above the rest. Drinkable, enjoyable, and then forgettable. Overall, fair.

From a bottle poured a clear golden color with fair amount of quickly leaving head. Nice tart flavor with a lingering finish.

Bottle. Clear pale yellow pour. Quickly receding head. Aroma of apples. Flavor was apples, some bitterness. not much there. Fizzy mouth with a decently dry feel.

Bottle. Pours with a very clear pale body with a small fizzy white head that plays a vanishing act. Slightly room filling aroma. Notes of vinegar and a bit of sour-barnyard wild yeast note (but not noticed anywhere else but the aroma...no gushing and not in the taste), dry apples, and musty books. Taste is sweet and sour apple juice. A bit bland, but not bad at all. Some sulfur. Lively carbonation and a bit of a thin mouthfeel. Very sweet for a "dry" cider. Uh,oh, the medium is on deck...hope it is not cloying!
