Commercial Description:
Akin to a barley wine, we suggest this ale as an after dinner drink. It has a truly unique & sophisticated flavor due to the use of wildflower honey as the catalyst for the production of alcohol. We simply use pale malt and a very small amount of Target hops in this Belgian style ale. The bulk of the body, color and sweetness come from the 2,000 lbs. of honey we add to the boil. The Brother is cellared for up to a year before it is bottled, which helps to marry the flavors and create the complex palate in this Bragget.

Honey and molasses on the nose. Pours amber blonde with a thin head. Honey and malts with some spicy malts.

Pours with a foamy off white head - amber redish color. Aroma is of dark fruits, caramel, toffee, cherry, and lots of honey. Taste is interesting with touches of spices, cinnamon and honey. Dry mouthfeel with light carbonation.

Bottle thanks to porterhouse. Pours with a foamy, off-white head over a beautiful hazed, ruby body. Aroma of apricot, raisin, toffee, sherry and honey. Taste is malty with sherry, toffee, cinnamon, and honey. Dryish, sugars from the honey are fully fermented. Light bubbles and a thick, syrupy mouthfeel.

Yellowish orange with a sweet honey aroma. Very mild bite-no alcohol. Butterscotch, honey, and malts on the palate. Very different. Was told it gets bettwer with age. Got an 07 bottle. Will revisit in a few years.

Sampled at Springslicker’s Fish Fry ’09. Clear golden amber pour with no head. Syrupy sweet aroma. Honey, candi sugar, maple, alcohol. I suppose this is fair for a mead, I just don’t have all that much experience with the style.

22 oz bottle (2005). red pour with little to no head. warming aroma of honey same warming honey taste. this is just starting to mellow out after 4 years of storage. i would love to see this made with some other honeys. i will pick up a few more bottles for aging

SpringsLicker’s Fish Fry. Sample from a bottle thanks to decaturstevo. Copper red-orange, off white head. Aroma of honey, raisins, caramel, some alc heat. Thick syrupy feel some more brown sugar tastes, honey and caramel.
