Commercial Description:
A blend of three Avery oak-aged experiments.

Oaked Oude Deux, an unreleased small-batch Avery beer. Oude Deux is a drak, roasty 8% ABV beer brewed with the Rochefort Belgian yeast strain. For the oaked version, brettanomyces were added to the casks for the subsequent 9 months of aging.
Opus One Reverend, our Belgian Quadrupel. This was aged for 8 months in Opus One Cabernet Sauvignon casks. One of the casks remained somewhat neutral, the other acquired a mild sour aspect.
Buffalo Trace Reverend, aged for six months in an Eagle Rare whiskey cask from Buffalo Trace. This cask was generously loaned to us by Chris Black at The Falling Rock.

The final blend started with three barrels of the Oude Deux, imparting some oak, tannins, dark fruit and phenols. Tasted alone, the Oude Deux has a somewhat medicinal aftertaste and can be astringent. Adding three barrels of the Opus One Reverend, with its huge malt backbone and heavier wine flavors, balanced the flavor dramatically. The mild acetic acid from one of the Opus One casks imparts a surprising amount of sourness considering that it only makes up one seventh of the blend. A single barrel of the Buffalo Trace Reverend rounds the flavor out by adding a distinct vanilla component to the finish without adding too much straight whiskey flavor.

Or to summarize: 3/7 Oaked Oude Deux, 3/7 Opus One Reverend, 1/7 Buffalo Trace Reverend.
The result is De Vogelbekdieren, an approximately 10.5% ABV blend with a final gravity of 1008.

Draught at Falling Rock, Denver. Hazy red brown coloured with a small off white head. Light acidic aroma of vanilla, red wine and oak with notes of brett. Fruity flavour and light acidic flavour of of oak and vanilla with notes of red wine and brett. Bretty finish.

On Tap at the Falling Rock Tap House, Denver 08/10/2008 Strong fruity sherry aroma. Dark coloured and strong in alcohol with some sour fruit flavour. A little dryness in a warming whisky finish.

(Draught) Pours an amber-brown body with a small beige head. Aroma of raisins, light rye toast, barnyard, and vinous. Flavor of raisins, citrus, apples, and caramel with a dry finish.

2008 GABF week @ Avery. Unfiltered brown body with a medium sized dark tan head. Forward nose full of woody, crusty toasted bread, some spicy balsamic notes that mimic Flanders red fairly well, and some dark candied fruit, vanilla, and roast as well. Vibrant and fresh on the tongue, rich and lush cookies, vinegar, dry/tannic wood, some charred berries... impressively good stuff all around. Thick and viscous, and while the alcohol is a little too high, it really only overwhelms in the long finish. Prickly acidity up front, smooth and thick in the back. Impressive stuff.

Draught, Avery. Head is mostly diminishing. Body is hazy medium/dark reddish-brown. Aroma is lightly to moderately malty (toasted grain, caramel, cookie), lightly to moderately yeasty (barnyard, horseblanket), with notes of cherry, plum, and wood. Flavor is moderately to heavily sweet, moderately acidic, lightly bitter. Finish is lightly to moderately sweet, moderately acidic, lightly to moderately bitter. Medium to full body, velvety texture, lively carbonation, lightly astringent, moderately alcoholic. The Oak Oude Deux component was quite apparent, but the Reverend addition punched up the richness factor such that this was significantly more enjoyable than the Deux by itself. Delicious.

Tasted on tap at the Bistro Barrel Aged Beer Festival on 11/15/2008. This sour ale poured a medium amber color from the tap. Small sized white foamy head. The aroma is fruity, bretty and sweet, with touch of oak and wood. A medium to full bodied sour ale. The malts are fruity and sweet with lots of oak and tannins. Bunch of brett and sweet fruitiness. This beer is kind of all over the place and is a big mish mash of flavors. Its kind of weird, but it mostly works. I figure this beer could taste different every single time you sample it. Another one of those weird and different beer from Avery. Which is NOT a bad thing. Mouthfeel is full. Finish is crisp and clean. Aftertaste is tart and funky.

Draught at Falling Rock Taphouse. Clear red / deep red - white head. Berries, winegums, candy, fruity, high sweetness, brett, glue, wood, oak, caramel, high malty, bike-glue, cherry, ryebread, roasted. Very nice aromatic and tastefull.

On tap @ Avery tasting room poured a hazy dark copper with a lasting creamy amber head. Aromas of citrus, carmel, barnyard and light leather. Palate was medium bodied and smooth with a dry lightly tart finish. Flavors of sour citrus, carmel, barnyard, light leather and a hint of spice with a smooth dry lightly tart finish.
